Chicken Nugget Salad

You'll need a fork to eat these chicken nuggets! In this easy, 15-minute lunch recipe, chicken nuggets, cherry tomatoes and whole-grain croutons are served on a healthy romaine salad with a honey mustard dressing.

Ingredients

  • 3 ounces frozen lightly breaded chicken chunks, such as Perdue® Simply Smart® brand

  • 2 cups packaged chopped romaine lettuce

  • 1 tablespoon white balsamic vinegar

  • 1 teaspoon olive oil

  • 1 teaspoon honey mustard

  • 1 teaspoon honey

  • teaspoon black pepper

  • 6 cherry tomatoes, halved (3 ounces)

  • ¼ cup whole-grain large croutons, coarsely crushed

Directions

  1. Microwave chicken chunks according to package directions.

  2. Meanwhile, place romaine in a medium bowl. For dressing, in a small bowl whisk together vinegar, oil, honey mustard, honey and pepper. Drizzle dressing over romaine and toss to coat. Spoon romaine mixture onto a large dinner plate.

  3. Top salad with cherry tomatoes, hot cooked chicken and croutons.
